Step 1: Prepare the pastry
Preheat the oven to 400°F. Line a baking sheet with foil and lightly grease it. Unfold the thawed puff pastry and gently roll it out to smooth any creases. Cut into 2-inch squares using a knife or pizza cutter.
Step 2: Add the Brie
Cut the Brie into small 1/2-inch cubes. Place one cube in the center of each square, pressing lightly.
Tip: Keep the rind on—it’s edible and helps hold the cheese together as it melts, preventing it from spreading too much.
Step 3: Top with preserves
Spoon about 1/2 teaspoon of peach preserves onto each piece of Brie.

Step 4: Bake
Bake for 12–15 minutes, or until the pastry is puffed and golden brown.

Remove from the oven and allow them to rest for 5–10 minutes before serving.
